It’s that time again; time for the annual Thanksgiving post. After almost 6 years of blogging, I have accumulated quite a few recipes that work in this category, so I have to cull some out so as to not end up with a post with 50 different additions. 😛

Let’s start with entrees. Because…turkey…ham. Yummy. 😀

I know that a lot of families like to serve a pasta dish as one of the main dishes so I’m including our favorite, this Cheesy Sausage And Meatball Pasta Bake. I have adored Boursin Cheese for years, but man, that stuff is expensive for the small amount you get. So I started making my own years ago. This is soooo good and always a hit. It’s creamy, great with veggies like celery sticks as well as crackers. If you have any left over, it also makes a great stuffing for chicken breasts.

While I admit to a secret love for the kind that slithers out of the can with a loud plop, I also love homemade cranberry sauce and make a large batch every year. Now we come to the breads. I’m not normally a big one for breads, but hot and fresh on the holidays? I tend to go for them more at that time. And these Angel Biscuits have become a family favorite. Since they have baking powder in them as well as yeast, they are fairly foolproof, which is great for the less experienced cooks out there.

The rolls I have been making for years are these Oatmeal Yeast Rolls. They are so fluffy and soft; perfect hot spread with butter or later as a mini turkey sandwich (Yes, I know this is a bad photo. The post is an old one, when my photography skills were sub-par, to say the least. The rolls however, are amazingly good)

I love to make a few loaves of bread for Thanksgiving as well as rolls. They are so good with dinner and make fantastic sandwiches the next day. I particularly love to make my Loaded Baked Potato Bread, The flavors in it go wonderfully with a turkey sandwich!

Then, of course, we have the part of dinner that everyone looks forward to; dessert! And man, you know I have some desserts to share with you! The last few years, my favorite pecan pie has had to vie with this Cranberry Apple Cake. I can’t say enough good things about this cake. It’s absolutely delicious and I can’t imagine the Thanksgiving meal without it now. It’s sweet, tangy, crispy, just a wonderful dessert that I look forward to all year.

So, what to do with leftovers once Thanksgiving is over? When you tire of just making a plate of leftovers, I have some things you can do with some of them. If the title says chicken, obviously you can sub in that leftover turkey staring you in the face.

We love Mexican food in my house. Yes, I know that much of what we all call Mexican food has been totally Americanized, but it’s still delicious, so who cares? Both times I posted this, I debated for weeks, WEEKS I say, as to whether it should be called pumpkin cranberry bread or cranberry pumpkin bread. I walked the floors, I lost weight from not being able to eat, I didn’t sleep for days at a time! Why, you ask!? (Pretend you asked) All for YOU! Yes, YOU, dear and faithful reader! All two of you. For this show of love, I believe I should have multiple boxes of Godiva truffles sent to me, along with large cars, house and land deeds and cold, hard cash.

I am redoing this recipe for two reasons- 1) because the original photo I took sucked donkey toes. I mean, we’re talking really really bad. Then, there is 2) which is that as good as the bread was back then, it could still be better. Now however? It’s awesome. It can’t be better. It is pumpkin cranberry (cranberry pumpkin?) nirvana. You eat this and angels weep, but only because they don’t have any. It has the perfect blend of squashy pumpkin flavor and tart sweet cranberry flavor, all mixed up in a perfectly moist bread redolent of warm Autumn spices and a touch of orange for zing.
This is a very easy bread to make. No chopping of this ingredient, dicing of this one. It uses canned pumpkin and canned cranberry sauce. Both of which also add incredible moistness as well as flavor to this.

You know the drill… git to cooking.

Easy Pumpkin Cranberry Bread

  • 3 1/2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1 tablespoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1 teaspoon ginger
  • 1/2 teaspoon ground cloves
  • 1 2/3 cup sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon fresh orange zest
  • 3 tablespoons fresh orange juice
  • 1 (16 ounce) can whole berry cranberry sauce (use a good quality brand; I have found over the years that the cheap store brand ones use more sugar then fruit and it shows in the taste. I prefer Ocean Spray )
  • 1 (16 ounce) can pumpkin (not pumpkin pie filling; just pureed pumpkin)
  • 2/3 cup vegetable oil
  • 1 egg yolk
  1. Preheat oven to 350 degrees. Butter or use cooking spray on one 8 inch and one 9 inch loaf pan. You can use both 9 inch pans if that is all you have, but you will have much flatter loaves and you’ll need to adjust your cooking time. Over the years, I have found this to be the best combination.
  2. In a large bowl, combine the flour, baking powder, baking soda, salt and spices. Whisk well. Set aside for now.
  3. In another bowl, combine the vanilla extract, orange zest and juice, cranberry sauce, pumpkin puree, oil and egg yolk. Mix well until it is relative smooth. You’ll have lumps from the cranberries of course.
  4. Dump the wet ingredients into the dry ones all at once. Use a wooden spoon or rubber spatula to combine them together JUST until mixed. You don’t want a bunch of flour of the bottom of the bowl, but don’t over mix it. That causes tough bread.
  5. Divide between the two prepared pans. Smooth the tops and bake at 350 until a wooden skewer inserted in the middle comes out with just a few moist crumbs, no loose batter, about 45 to 60 minutes. The 8 inch pan will probably finish before the 9 inch.
  6. Let cool in the pan on a rack for ten minutes, then carefully invert it into your protected hand and then re-invert it onto the rack. Let cool for about an hour before attempting to cut.

Have I ever mentioned that I keep my husband around in spite of some near fatal flaws? Well, if I haven’t… I do. I’m a sweetheart that way. I mean, this is a man who claims to not like doesn’t like sweets and is married to a blogger who makes mainly sweets. he also doesn’t like wings, which I adore, won’t eat mushrooms… which I adore… hates Bleu Cheese…which I adore…prefers white wine whereas I prefer red… and so on. You seeing a pattern here?

But the worst sin of all? He does NOT like desserts that are creamy. Unless they are ice cream, in which case all bets are off. But desserts like this cheesecake flan or this coconut flan tend to fall completely off of his radar. Some weird justification of “I don’t like the texture”. WHAT!?! What’s not to like? Creamy, silky, smooth… did I mention creamy? When I’m not looking, he probably doesn’t enjoy sunsets, pictures of cute kittens and babies or shows like “Little House On The Prairie” either. It’s all been a lie! A lie, I say! *Sobs and goes to eat his share of the flan*

That said, his not liking the type of dessert I most frequently reach for does have its benefits. I get to eat what would have been his.

This is why I keep him.

This flan is so perfectly seasonal. Pumpkin and spices combine with a subtle hint of maple and all of that is based in a creamy, silky smooth flan.  Add in the sweet caramel topping and it’s Heavenly.

You know the drill…. 🙂

Creamy Pumpkin Maple Flan

  • 1 cup sugar
  • 1/4 cup water
  • 1 1/2 cups heavy cream
  • 1 can sweetened condensed milk (they only come in one size; I believe it is 14 ounces)
  • 8 ounces softened cream cheese
  • 1/4 cup maple sugar (you can find this at any well stocked grocery store. I buy mine at Trader Joes)
  • 1 cup pumpkin puree (canned is fine)
  • 4 eggs
  • 2 egg yolks
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon cloves
  • 1 tablespoon vanilla extract
  1. Preheat the oven to 300 degrees. Start a kettle of water to boiling.
  2. Combine the regular sugar and the water in a small pot. Cook over medium heat, stirring until the sugar is dissolved. When the sugar is dissolved, turn the heat up to a medium high and cook, with NO stirring, until the caramel is a medium brown color, about 10 minutes. Do NOT walk away from this to tend to the kids, vacuum, take a nap, whatever. Stay near it and just work on the rest of the recipe and check it frequently.
  3. When it is ready, pour it onto the bottom of a deep 10 inch round pan that you have placed inside a larger pan. I use a cake pan.
  4. For the flan part,  in a large bowl, combine the cream cheese and maple sugar. Beat well at low speed with a hand mixer. Add in the pumpkin and spices and beat at low speed.  Add in the eggs and the yolks and beat until combined.
  5. Add in the cream and sweetened condensed milk and whisk (trust me… don’t continue to use the beater. Don’t ask how I know these things.) until it is thoroughly combined.
  6. Use a fine mesh strainer and strain this through it into the pan with the caramel. The straining isn’t absolutely necessary but it prevents you from having any fibrous parts in the custard and makes it much smoother.
  7. Carefully place the whole pan into the 300 degree oven. Carefully (again), pour the boiling water into the large pan surrounding the flan, being careful not to splash it into the flan itself. You want it to come about halfway up the side of the cake pan.
  8. Bake for about 60 to 70 minutes or until a butter knife inserted off center comes out clean. The center should still be jiggly, but not loose; rather like when you wiggle set jello.
  9. Cool for about 60 minutes, then put in the fridge to chill for at least 2 hours or so.
  10. Place a large plate over the flan and invert it onto the plate.
  11. Serve. Sing my praises.

Do you see the difference in the name there in comparison to a certain company that makes a pumpkin spice latte? That, my friend, is because this one has *GASPS* actual pumpkin in it, first and foremost. So the name reflects that. You have no idea how irked I was the first time I got the big name companies pumpkin spice latte and realized that there was no pumpkin in it. What a gyp!

So I, like 14,382 other bloggers, created my own version. Yeah, yeah, I know. This is ubiquitous online and I’m just one more hack posting it 😛 But ya know what? There may actually be one or two people besides my husband and kids who don’t read a ton of food blogs and just read little old me cause I’m special or something. Work with me here. I’m having a low self esteem day. Tell me I’m special. Maybe buy me some roses, take me out to dinner and a movie and tell me I have purty eyes. So this is for the people who may not have seen this on those other 14,382 blogs.

When you’re done doing all that (I like dramas or documentaries and prefer Italian or Indian food, btw), make this latte. Well, make the latte syrup and THEN make a latte. The syrup will last weeks in the fridge. Pour it into a squeeze bottle or just put it in a covered container. And if you live in my household, keep it away from the 19 year old, who seems to think he needs 1/2 cup of this in one cup of coffee that is then covered with 3 cups of whipped cream.

You know the drill… get to cookin’. Or, erhmmm, simmering…and latteing.

Spiced Pumpkin Latte

  • 1 1/2 cups sugar
  • 1/2 cup dark brown sugar
  • 1/3 cup pumpkin puree
  • 1 1/2 teaspoons vanilla extract
  • 2 teaspoons cinnamon
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg
  1. In a medium pot, whisk together all the ingredients.
  2. Bring to a boil over medium high heat, then immediately turn down to low. Let it simmer for about 10 minutes. Let cool.
  3. Now you can either strain this if the sight of the spices in your cup will bother you (I can be pretty anal, but I don’t strain it. The spices settle to the bottom and don’t cause any issues.) or just store this, covered, in the fridge without straining. Either way, refrigerate it..
  4. To make a latte, use 2 to 3 tablespoons of this per cup of coffee; less if you only want lightly sweetened, more if you’re working towards a restful diabetic coma. Add cream and top with whipped cream and a sprinkle of cinnamon. Thank me… preferably with big bills or that dinner and a movie.
  5. You’ll notice mine is rather light colored. I was drinking it later in the day so cut the amount of coffee in half for this one. Expect a stronger coffee color in a typical cup.

I waited as long as I could. But it was time…. time for a pumpkin recipe. 😀 it occurred to me as I was contemplating what to make that for a blog named From Cupcakes To Caviar, I don’t have many cupcake recipes on here. Yes, yes, before someone brings it up, I am well aware that I don’t have any caviar recipes on here. Guess what? I never will. 😛 I just liked the way the name sounded when I created the blog and it was simply meant to denote that the blog will have everything from the simple to the fancy in it. Buttttt, as I was saying, I realized when mulling over pumpkiny goodness ideas that I don’t have many cupcakes on here. !!!! That had to be rectified immediately. So pumpkin cupcakes it was. But I didn’t want to do plain cupcakes; oh no, not me! So I decided on using brown butter in them. When I went to see if that had been done before, I found a bazillion variations lol. So rather than beat a dead pumpkin, I used the recipe from one of my favorite blogs, Two Peas And Their Pod because I knew if it came from there, it would be good. The only thing I did differently was in the matter of spice. I like pumpkin desserts that are heavy on the warm Autumnal spices and their recipe was a bit light for my tastes, so I used quite a bit a little bit more. I also used more vanilla and dark brown sugar rather than light because we enjoy the more caramelly flavor it lends.

These are some delicious cupcakes. The cupcakes part is just dense enough without being heavy and with the additional spices and extra vanilla I added, it tastes like Fall. When I was trying to decide what to do for frosting, I wanted to vary a bit there too. I didn’t want cinnamon or cream cheese or caramel or any of the other “normal” flavors. We all know by now that I don’t do normal well in any aspect of my life. So I chose a combo of maple and honey; both flavors I love but both flavors that can be a bit one dimensional on their own. I knew it would need a bit of tang though, what with 3 sources of sweetness, so I added some sour cream. You could probably sub a thick Greek yogurt if you wanted to. The frosting is quite lovely if I do say so myself. Sweet, but not cloying with a touch of tang from the sour cream and a nice maple and honey flavor.

This all comes together fairly quickly; the long list is mainly spices, so don’t cringe…  you know the drill 🙂

Brown Butter Pumpkin Cupcakes & Maple Honey Frosting

  •  3/4 cup (1.5 sticks) unsalted butter, room temp
  • 1 2/3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon cloves
  • 3/4 teaspoon ground ginger
  • 1 cup pumpkin puree
  • 1 cup packed dark brown sugar
  • 1/2 cup sugar
  • 1 tablespoon vanilla extract
  • 2 eggs
  • Maple Honey Frosting-
  • 4 to 4 1/2 cups powdered sugar
  • 3/4 cup unsalted butter, room temp
  • 1/2 cup sour cream
  • 1/4 cup honey
  • 1/4 cup real maple syrup (preferably grade B as it has a stronger flavor)
  • 1/4 teaspoon maple flavoring
  • 1/2 teaspoon vanilla extract
  1. Preheat oven to 325 degrees. Line 15 muffin cups with paper or foil liners.
  2. Melt your butter in a medium sauce pot over medium low heat. Stir occasionally as it cooks until it turns a lovely medium brown color and has a nutty aroma. Immediately take it off the heat and pour it into a medium sized bowl to cool.
  3. In a small bowl, whisk to combine the flour, baking powder, salt and spices. Add the pumpkin puree, sugar, vanilla and eggs to the cooled brown butter. Whisk to combine. Dump the flour mixture into the butter one and stir just until it’s combined. Don’t overbeat.
  4. Spoon the batter into the prepared cups, filling them about 3/4 full. bake at 325 degrees for about 20 minutes or until a skewer inserted in the center of one comes out clean.
  5. Remove the cupcakes from the pan to a rack to cool completely. While they cool, prepare your frosting- In a large bowl, on high speed, beat your butter for about 2 to 3 minutes, scraping the bowl occasionally, until it is light and fluffy looking.
  6. Add in 4 cups of the powdered sugar and with the mixer OFF (unless you want to have a face full of powdered sugar), stir it around a bit to mix in the sugar a bit. Turn the mixer on low and beat until well combined. Snatch a bite of the butter/sugar mix out of the bowl and enjoy, because it’s one of Gods gifts to us hehe
  7. Add in the rest of the icing ingredients, except the last bit of powdered sugar. Beat at high speed for about 5 minutes. Yes, you read that right. When you first add the ingredients and beat it, it will look soupy. Keep beating and it will come together and thicken. If it isn’t thick enough for piping after five minutes, add the last 1/2 cup of sugar and beat on high speed for about another minute or two. Refrigerate the frosting for 30 minutes.
  8. When ready to frost, stir the frosting a little to loosen it and pipe or spread the frosting on each cupcake. If you have any extra, it can be refrigerated, covered. It’s strangely appealing on bagels and would also be great all melty on top of a waffle or pancakes.

Back when she was little, my daughter Rachel didn’t like pumpkin pie. For a minute or two each year, I would contemplate sending her to an orphanage a la Oliver Twist style, until she got so hungry that even my pie looked good. Honestly, I think I always just wanted someone to hold a bowl out to me and say (in a cockney accent) “May I have some more, sir?” Though no, I have no idea why they would be calling me sir. I have rather prominent boobs. Hard to mistake me for a guy. But I digress.

Now, she goes back and forth. One year she hates pumpkin pie and then another she’ll like it. Go figure. I think we all know a pumpkin pie hating weirdo though. I’m looking at YOU, Kim, you pepsi swigging pumpkin hater.  So what can you do? Especially since it’s so hard to find an orphanage. Make something ELSE pumpkin flavored and refuse to let them have any stuffing, turkey or cranberry sauce until they eat something pumpkin. WHAT!? It seems reasonable enough to me.

Thursday we will be bringing meals over to the volunteer firefighters who have to work and one of the things I’m bringing is one of these cakes. The recipe makes two and who better to share with than the gentlmen who will come save my home from burning if I drink a bit too much Cabernet while I cook? 😛

This came from the Saveur web site. They are pretty much my favorite cooking magazine and this cake is one of the reasons why. This is moist, not overly sweet, thus perfect after a heavy meal, has a touch of crunch from crispy edges and the pepitas on top. I changed it just a bit. The original called for just plain mascarpone and I know my family well enough to know that unsweetened dollops of a creamy cheese wouldn’t work. I’m glad I changed it. The cake really is NOT that sweet so the mascarpone flavored with a touch of sugar and vanilla was a nice counterpoint to the cake itself. I also added more spice (and deleted the cardamom because I didn’t have any nor the cash to buy any) than they called for and I’m again glad I did. It could use maybe even a bit more than what I added.

  •  3 cups flour
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon cloves
  • 1 1/2 teaspoons ground ginger
  • 1 1/2 teaspoons grated nutmeg
  • 1 teaspoon salt
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 2 cups sugar
  • 1 16 ounce can pumpkin puree (NOT pie filling)
  • zest of one orange (I used 1/2 teaspoon of orange oil)
  • 1 1/4 cups canola oil (I used vegetable and it was fine. I don’t like canola oil)
  • 8 ounces mascarpone cheese, room temp
  • 1/4 cup sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 tablespoons heavy cream or half and half
  • 1/4 cup pepitas
  1. Heat oven to 350. Grease and flour two 8 inch cake pans. I used 9 inch pans and this was still fine; made a nice thick cake.
  2. On a small bowl, combine the mascarpone, 1/4 cup of sugar, 1 1/2 teaspoons cream and 1 teaspoon vanilla extract. Mix well and set aside
  3. In a medium bowl, whisk together the flour, salt, baking soda and spices.
  4. In a large bowl, combine the pumpkin, eggs, sugar, oil, orange zest and canola oil. Mix well.
  5. Add the flour mixture to the pumpkin mixture. Beat well until thoroughly combined. Divide the batter between the two pans.
  6. Dollop the mascarpone mix evenly over the two pans. Use a butter knife to swirl it into the batter lightly. Sprinkle the pepitas evenly over the two cakes.
  7. Bake at 350 for about 35 to 40 minutes or untila wooden toothpick inserted into the middle comes out clean. Let cool in pan for about ten minutes, then turn out of pan to finish cooling.

I remember Thanksgiving when I was a kid. I’ve mentioned before that my mom was not much of a cook. In her defense, as I’ve said, she was a single mom who worked ungodly hours and even had she been home, it just wasn’t her passion. Thanksgivings that I remember were fairly rushed because her long term b/f worked as a train engineer and we always had Thanksgiving dinner at like 2pm so he could get to work. Always pissed off my brother, sister and myself. I think that, being the children of divorce, we wanted that whole Norman Rockwell ideal on holidays and that just doesn’t happen in real life. I remember a fairly dry turkey, stuffing that was actually pretty good, mashed taters, the ubiquitous sweet potatoes covered in marshmallows which I still love, (on a side note, I remember the year my brother wanted something different and made sweet potatoes with oj in them and no marshmallows. No one ate them lol. Sorry, Steve.), plus two store bought pies- pumpkin and pecan.

Nowadays, even before I blogged, I go a bit more all out. Holidays give me an excuse to make all those seasonal things that I’ve had tabbed in cookbooks and magazines for like 37 years. The end result is enough food to feed 478 people which was great when I had a ton of people at home, not so much now, especially this year when there will be only 5 of us here. But will that stop me? No. I’ll still make far too much and be grateful we are able to do so. That will include a pumpkin pie or two, a pecan pie and quite possibly this cheesecake.

One of the holiday-ish recipes I have had tabbed forever was this recipe. I found it in a 2006 issue of Bon Appetit, their 50th anniversary issue which was pretty awesome as magazines go.

Now, if you try this, like I told my husband, remember, this is a cheesecake, not a typical pumpkin pie. So it’s tangier and the texture is different. But trust me, this is NOT a bad thing. The crust and the topping are one and the same, just used differently. Both are crunchy, sweet enough to be a good foil to the filling and topping and just plain yummy. The filling is creamy, spicy, slightly tangy and nice and pumpkiny.  I doubled the recipe (because it used only a partial can of pumpkin and I HATE that) and added a good bit more in the way of spices as well as some vanilla plus the crust/crumbs didn’t have any spice at ALL which bored me so I added some there too. If you like pumpkin pie, if you like cheesecake, if you like “normal” pumpkin cheesecake, you need to try this one. It’s pretty yummy and I’m glad I doubled the recipe though I’m sure my thighs and hips aren’t so happy with me. For the record, I’m posting this in the quantities they used, If you want to double it as I did, it’s easy enough to do 🙂

This looks like it has a lot of steps and ingredients, but really, it all comes together quickly since the bulk of the ingredients are just the spices.

  • Crust/crumb topping-
  • 1 cup flour
  • 1/4 cup dark brown sugar
  • 1 1/2 teaspoons cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter
  • 1 cup chopped pecans
  • 3/4 cup old fashioned oatmeal
  • Filling-
  • 1 8 ounce package cream cheese, room temp
  • 3/4 cup pumpkin puree
  • 1/2 cup sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon nutmeg
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon allspice
  • Topping-
  • 1 cup sour cream
  • 3 tablespoons sugar
  • 1/2 teaspoon vanilla extract
  1. Preheat oven to 350 degrees.  Butter a 9 inch square pan (or use something like Bakers Joy which is what I did) and set aside. Have ready a 9×13 inch rimmed baking sheet.
  2. To make the crust/crumbs, combine the flour, salt, brown sugar and spices. Using a pastry cutter, cut in the cold butter until it resembles small crumbs. Stir in the pecans and oats.
  3. Press 3 1/2 cups of the mixture firmly into the bottom of the 9 inch pan to form the crust. Spread the rest of the mixture onto the 13×9 inch pan. Put both in the preheated oven.
  4. Bake the sheet pan for about 15 minutes or until golden brown, stirring once or twice during baking. When it’s done, break it up into smaller bits and set aside. For the crust, bake for about 30 minutes, until golden brown and firm.
  5. For filling- Using a hand mixer, combine all the filling ingredients. Beat until smooth. Pour onto the hot crust and return to the oven.
  6. Bake at 350 for about 20 minutes, until it is set, looks dry at the center and is beginning to puff up around the edges.
  7. While it bakes, make the topping. Simply combine all the ingredients in a small bowl and mix well.
  8. When cheesecake is done, remove from the oven and spread the topping over it. Return to the oven for five minutes. Take out and set onto a rack to cool completely, about 2 hours. When it is totally cool, take the reserved broken up crumbs and sprinkle evenly over the cheesecake. Press down lightly to make them adhere. Chill the cheesecake until cold. To serve, use a sharp knife dipped in hot water to make clean cuts.

Up until recently, Starbucks and I were very good friends. We had sleepovers, braided each others hair, talked about boys and cried together over all the other mean coffee places. Then one day, I cheated on my friendship with Starbucks. I found a NEW bff. It’s name was The Daily Grind. I played there one day on a whim and well, I’m ashamed to say, that after that, I never gave Starbucks coffee a second thought. Though every once in a while, I go back there for nostalgia’s sake. But Starbucks can’t make Milky Way Lattes; The Daily Grind can.

There’s one problem with this new relationship however. My new bff coffee place doesn’t sell baked goods. Oh, they have some wrapped stuff that was mass produced in somewhere like Taiwan, the best place ever to get fancy pastries :-p  But they don’t have the pumpkin bread you can get at Starbucks.  I can’t go to Starbucks anymore though. They all look at me funny, like I’m wearing a big red letter A on my chest. It’s just too awkward, too painful remembering the good times *sobs a little and takes a sip of my Milky Way Latte to calm down*

So what did I do? I made my own. Yes, you heard that right, Starbucks!!! I don’t need your  high priced pumpkin bread anymore! I have no reason to come crawling back to you groveling for forgiveness just so that I can sneak a piece of pumpkin bread. Buahahaaaaaaa!!! Guess what else? My pumpkin bread? It’s better than yours. Yep. Better. It’s moist and spicy and pumpkiny (yes, that too is now a word. I swear, the world needs ME to revise the dictionary. Language would be so much more interesting.) with a hint of maple in the bread. It’s also not as overly sweet as your bread and MINE is covered in sweet/salty maple glazed pepitas. Take THAT, Starbucks!

Sorry. I’m calm now. You all know how those break up moments can be, right?

Maple Pumpkin Bread With Maple Glazed Pepitas

  • 3 cups flour
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 4 teaspoons cinnamon
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon ground cloves
  • 3/4 teaspoon ground allspice
  • 3/4 teaspoon ground nutmeg
  • 7 eggs
  • 4 tablespoons molasses
  • 1 tablespoon vanilla extract
  • 1 1/4 teaspoons maple flavoring
  • 1 3/4 cups sugar
  • 2/3 cup dark brown sugar
  • 1 16 ounce can pumpkin (NOT pumpkin pie filling)
  • 1 3/4 cup vegetable oil
  • 1/2 cup dry roasted Pepita’s
  • 3 tablespoons pure maple syrup
  1. Preheat your oven to 350 degrees. Grease and flour two 9 inch loaf pans (or use a product such as Bakers Joy and spray them)
  2. In a large bowl, combine the flour, baking powder, baking soda, salt, regular sugar and spices.
  3. In another large bowl, at low speed with a hand mixer, combine the eggs, molasses, brown sugar, vanilla extract and maple flavoring. Mix well. Pour in the vegetable oil and the can of pumpkin in and mix well.
  4. Pour the dry ingredients into the bowl of wet ones and mix at low speed just until well combined. It’s fine if there are some small lumps left.
  5. Divide the batter evenly between the two loaf pans.
  6. In a small bowl, toss the pepitas with the maple syrup. Sprinkle evenly between the two pans of batter.
  7. Bake at 350 degrees until a wooden skewer inserted in the center of the bread comes out clean, with at most a few loose crumbs on it.
  8. Cool in the pans set on a rack for five minutes.
  9. Loosen the breads from the pans by running a butter knife around the edges then turn the loaves out onto the rack to finish cooling.

When I started this blog, I had a hard time making certain things to post on the blog. Why? Because I am a rabid traditionalist and it tends to make me a bit rigid in my thinking at times. As much as I go against the seasonal cooking idea in some things I make (Pumpkin Cranberry Bread in June, Chili or beef stew in the middle of Summer, grilling out when my back porch is covered in snow and I can’t feel my toes) there are other things that I make ONLY on the holidays. My world famous sausage stuffing is only for Thanksgiving. Honest… world famous…. it’s been eaten and enjoyed by major celebrities, heads of state of at least 32 countries, 4 popes and Queen Elizabeth. We just call her Liz here cause we’re BFF’S like that. My Pecan Pie? Only Christmas and Thanksgiving. My Turtle Cookies? Christmas. The pumpkin pie I have been making since my oldest son, now 27, was about 4? Only at Thanksgiving and since the older kids have grown and moved out, sometimes at Christmas if they didn’t make it home for Thanksgiving.

But the other day I realized something. By doing that, I was going against the whole reason I started this blog. For years, I heard what a good cook I was, how I needed to write a cookbook of country/homey classics, etc etc etc. So I started blogging. And when I started, one of the things I wanted to do was share our families favorite dishes. But by being so darn rigid, I wasn’t able to do so. Because if I only make this pumpkin pie at Thanksgiving, how can I share it with YOU in time for you to make it for YOUR Thanksgiving? I couldn’t share it after the fact because then it was too late. So I just didn’t share at all. That stops now. This year my family and I will enjoy our holiday favorites a time or two before the holidays so that I can share them with you.

On that note, this is truly the best pumpkin pie ever. I got the original recipe from The Fannie Farmer Baking Book (best baking book ever… you have got to hunt it down on Amazon) and over time, have adapted to more to our tastes; i.e., a bit more spice, using cream and so on. But basically, it’s the same recipe from the book. This crust is wonderful. It’s not like cornbread so don’t worry about that. It just has a bit more texture and a touch of crunch from the cornmeal and the rustic flavor of it goes so well with a pie like pumpkin. But feel free to sub your favorite pie crust recipe or even a store bought one. Since this pie uses dark brown sugar and extra spices, it IS darker when cooked than the typical color. So don’t think you overcooked it when it comes out a dark orangeish brown instead of the “normal” light orange color. It’s still fine. 🙂

Decadent Extra Creamy Pumpkin Pie With A Cornmeal Crust

  • Crust- (Can sub your favorite crust)
  • 1 cup all purpose flour
  • 1/2 cup yellow cornmeal (NOT cornmeal mix)
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup solid shortening, chilled
  • 3 to 6 tablespoons water (I usually make this in late Autumn and use about 3 tablespoons, but it being Summer, I used closer to the 6 this time)
  • Pumpkin Filling-
  • 2 cups pumpkin puree (NOT pre-made pie filling)
  • 3 eggs
  • 1 egg yolk (adds extra richness but is optional)
  • 1 1/2 cups heavy cream
  • 3/4 cup dark brown sugar
  • 1/2 teaspoon salt
  • 1 tablespoon cinnamon
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon nutmeg (do freshly grated if you can. It’s so much better.)
  • 1/2 teaspoon ground cloves (be careful with the cloves and don’t go overboard- they can be very strong and bitter if you use too much)
  • 1/2 teaspoon ground allspice
  • 1 teaspoon vanilla extract
  1. Crust-
  2. Preheat oven to 425 degrees.
  3. Combine the cornmeal, flour, sugar and salt in a large bowl. Using a pastry blender,  cut the cold shortening into the flour mixture until it resembles fine crumbs. Add the water, about 2 tablespoons at a time. Mix thoroughly. When enough water has been added, you should have a cohesive mixture that you can form into a ball, which, when pressed, doesn’t crumble at all. it will however, be a soft dough.
  4. On a lightly floured board or counter, roll the dough out to be 2 inches wider than the pie pan you are using is when inverted. This dough tears easily but it also patches easily. the easiest way to get it into the pan is the old method of easing it off of the counter with a spatula, then wrapping it around the rolling pin and laying it in the pie pan.
  5. After laying the dough in the pan, gently press it into the sides of the pan. Don’t stretch or pull at the dough because that can cause it to shrink up as it bakes. Crimp your top edges and prick the crust all over with a fork.
  6. Bake at 425 for 10 minutes or until it is just beginning to brown. Set aside.
  7. For the filling-
  8. In a large bowl, beat the pumpkin puree, eggs and the egg yolk.
  9. Add the cream and sugar, then beat in the spices and vanilla. Taste a bit on your finger to make sure it has enough spice for you. If not, add a bit more.
  10. Beat until the mixture is smooth with no pumpkin or sugar lumps.
  11. Pour into the prepared pie crust.
  12. Bake at 425 for 10 minutes, then turn the heat down to 300. Bake for about 40 minutes, until the filling is almost set. A sharp knife inserted off center should come out almost clean, with just a few moist crumbs on it and the center of the pie should still be slightly jiggly. It will set up as it cools.
  13. Chill to finish setting. It can then be served either at room temp or chilled. Serve with whipped cream, creme fraiche or ice cream. Enjoy! We’ve always loved this pie. I hope you do too. 🙂

Hey there everybody! Did you all have a good Summer? ready for Autumn? Me too. You back there in the corner saying “no, I want it to be 95 degrees still”… please leave. You scare me. 😛

I had to gasp a little bit when I saw that it had been almost 2 months since my last post. Sit back with a hot drink while I try to explain. In a nutshell… life just got a bit overwhelming and I needed to prioritize a little. Those of you who also blog can empathize when I say that at times you get so involved in the blogging world that the real one tends to fade away. And while that can be fun, it also isn’t healthy.

What also isn’t healthy is having a blog known for decadent treats and having to taste test all of it before you post lol. Mind you, I’ve always been good about not eating much of what I made for the blog but it was difficult having it around. The reason being, I was on a personal journey of my own to lose some of my excess weight. Have I succeeded you ask? Well, when I started I was a tight size 16 verging on 18. Now I’m more or less comfortable size 12 (depends on the brand of clothing). Almost 50 pounds of me gone with the wind…or the scale…or the Twinkies. Whichever 😛 Had I kept posting the things I normally made, I’m not positive I could have done this. Now however, I have the confidence to get back to work here.

Will everything I make now be low cal, healthy and boring? Hell no! I will still be posting decadent treats full of fat and calories. But… I will also be posting things that taste great but won’t make you need to pull out your fat girl pants.

What I am coming back with today is a mix of the two. Like I said up top, I’m ready for Autumn. To me, Autumn means pumpkin. Then I have a side of pumpkin and follow it up with some pumpkin to make it a nice rounded meal. 😀 Yeah, I kinda like pumpkin. I also like fitting into those size twelves. So that means that the decadent pumpkin treats have to be doled out carefully. Mind you, this isn’t exactly low cal. But neither is it a slice of pumpkin pie covered in home made whipped cream. And there is actually nutritional value in this. Go figure huh? Me… posting something semi good for you.

This also tastes amazing. It will take care of that pumpkin pie craving quite nicely at about 210 calories per serving. It’s also rich, creamy and decadent but made with Greek yogurt. I have this showing as one parfait but in truth that’s because I had no small glasses. This is easily enough for two people (thus the 210 calories). So go get some yogurt and open up a can of pumpkin. I think you’re going to like this.

Greek Yogurt Pumpkin Pie Parfait

  • 1 6 ounce carton vanilla Greek yogurt
  • 1 tablespoon brown sugar
  • 3 tablespoons canned pumpkin (NOT pie filling)
  • 1/3 cup granola (just use your favorite)
  • 3 tablespoons + one teaspoon light  non dairy whipped topping
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon ginger
  • 1/8 teaspoon cloves
  • 1/8 teaspoon nutmeg
  1. In a small bowl, combine the yogurt, brown sugar, pumpkin and 3 tablespoons of whipped topping by folding them together gently. Fold in the spices.
  2. In 1 regular sized or 2 small parfait glasses (or any glass…or bowl…or dog dish; up to you) sprinkle down half of the granola. Top with half the yogurt mixture. Top with more granola, holding back some for garnish if desired. Top with the remaining yogurt. Garnish with the remaining granola, the teaspoon of whipped topping and some cinnamon. Refrigerate for about an hour to soften up the granola.
  3. Dive in
  4. Put away your fat girl pants.
