There’s A Reason I Do Certain Things

Triple Berry Muffins

Like using muffin/cupcakes liners when making those baked goodies. Muffin pans hate me. They really do. It’s a vast right wing conspiracy! I did NOT have sexual relations with that woman!

Sorry; I was channeling the Clintons. But really… muffin pans hate me. It never fails. I make a tasty batter… I spoon into HEAVILY greased pans… they come out looking completely beautiful.

Then they stick. Did I mention that muffin pans hate me? They are evil sentient life forms that delight in my agony.

Muffin pan liners however are wonderful angelic sentient life forms that make my muffins come out easily and not in 37 pieces (we ate all those straight from the pan or as piles of muffin mush in bowls… still tasted great lol). Yes, I know that sometimes the sight of a whole muffin with no liners is prettier but muffin pans hate me. I’m not sure if I mentioned that yet.

Sometimes You Just Have To Give In

Sopapilla Cheesecake

I have a thing about not trying anything that is trendy, too talked about or gets the rating of “to die for”. I’ve mentioned before as a matter of fact how much I loathe that phrase. No matter how much of a foodie I am, there are no foods I would die for. Nope, not even Twinkies, Cheetos, a medium rare ribeye or a tall glass of Coke. I also tend to have a snobby streak when it comes to trying some recipes. Yep; me, the woman who happily uses cake mixes and cream of crap soups. For some reason when I bake, I want to know that I baked it, not that I used fifty six convenience products. Well, other than that cake mix thing. Don’t stop now! Click here!

Is There Such A Thing As Too Much Cheese?

Creamy Chicken Enchilada Casserole

I think not. No… really.

I think.

NOT!

Sorry.

But really. I love cheese. Like as much as I love chocolate… or butterflies… or cute pot bellied pigs…or Twinkies and Cheetos. And if you’ve been reading my blog at all, you know how much I love Twinkies and Cheetos. Btw, please don’t anyone remind me of that Hostess going out of business thing. I’m working my way through the black mood that news caused. It’s not easy and involves massive hoarding of snack cakes. Continue reading

I Love Cheesecake And I’m Also lazy

Key Lime Cheesecake Bars

Which is why I don’t make cheesecake often. I love it but for some reason cheesecake is one of those things that seems far too time consuming to me. I THINK I’m going to make it… I have 972 recipes printed out for it as well as those in my vast cookbook collection… I WANT to make them because, well, I love cheesecake but there’s that lazy thing. I like things I can throw together and while I realize logically that other than the crust, you DO just throw cheesecake together, I have this weird “it’s too much trouble” mind block going. Happy Birthday To My Son Cameron

Cameron and his wife Tiffany

Twenty four years ago today I had my second child Cameron. I look back over the years and it’s hard to believe it’s been that long. Hard to believe that the little boy who looked like a cross between a starving Ethiopian and an Elf (He was frightfully skinny when \he was young with a really pointy face lol) has been married to his high school sweetheart for a few years, had the nerve to move away to Florida and is getting ready to enter graduate school.  Ummm… hello… I don’t remember giving permission for the time to pass and for him to grow up. Wanna Drink? Me Neither.

Pina Colada Panna Cotta With Caramelized Pineapple

I’ve always been a pretty boring person. Other than one period in my life when I was 18/19 I’ve never been a big drinker. There are some things I like such as a glass of wine every once in a while or maybe some Baileys but it’s never been something that is important to me. I’ve also found that as I’ve aged (I’m all of 27 now *cough cough*) I can’t really handle alcohol anyway. Half a glass of wine and my body lets me know “Janet, if you drink ONE sip more of that, I’ll make you pay for it”. Mind you, there are exceptions but they are rare. *Remembers the bottle of whipped cream vodka and my daughter in law Kaitlyn loving it as much as I did* Continue reading

Do you Ever Have Days When…

Maple & Sausage Corn Bread

…You probably shouldn’t be allowed near anything? Yeah, me too. Today is certainly one of those days.

I have a three year old who has absolutely no interest in being toilet trained and since I’ve done this five times before with no problem, I can only wonder what I’m doing wrong this time. And I’m getting bored washing peed in (or worse) “big boy pants” lol.

I made some scones for all of you that SHOULD have been awesome. We’ll just call them “Omelet Scones” because they had all the ingredients for an omelet tucked into a scone. Continue reading

Something Smells Fishy Over Here

Smoked Salmon Chowder

Well actually, that’s not true. How many of you realized that if your fish smells fishy, it’s old? It may still be perfectly edible but it’s certainly not fresh. Just thought I’d throw that tidbit out there. If fish smells fishy, buy different fish.

I love fish. Unfortunately we don’t eat it as often as my taste buds or my health would like. it’s one of those foods that is so good for you but is also usually so darn expensive! Continue reading
