I would apologize for having been gone so long, but you’ve all heard it before. I’ve become like that straying spouse that says for the 12th time, “I promise; it won’t happen again! Trust me!” and then they step out on you again 😛 I do what I can post wise lately and I know that those of you who have been around for pretty much my full five years (Yes! We passed the five year mark early this month. D’you believe it!?) love me anyway.

Are you all as totally sick as me of all the political crap on facebook anymore? I love my friends, but I swear, I can’t scroll half an inch there without being bombarded with “Democrats are evil; no, Republicans are evil!” posts. It is enough to make one want to go live on a deserted island in the south pacific with only a banana tree for food and a macaw for company.  Wait; I wanted to do that anyway. I mean, really, think about it. Bananas are a perfectly good food to live off of (though if I wanted protein, I imagine my buddy the macaw would start looking tasty hehe) and you can’t beat a nice sunny tropical island. Just send me with a few crates of books and a way to play music and it’s all good.

This wasn’t originally going to be a post, but it was too tasty to keep to myself. It’s nothing earth shaking. I was making my original banana bread and I noticed that I had a partial bag of chocolate chips I needed to use up. Then, when I glanced in the freezer for something else, I saw my stored bag of streusel. The two brain cells I have left decided to use both of these things in the bread. I have to say, it’s really quite good. I added a layer of streusel to the middle of each loaf along with a small handful of chocolate chips, then topped each loaf with more of the same. Simple, yet delicious. I sent some in with Joshie for his teacher today and she texted me saying it was fantastic. I soooo love when people enjoy what I’ve made. 🙂

This is a perfect after school snack, great with coffee for a quick and somewhat decadent breakfast (but it has bananas! It must be good for you, right?!), a nice late night treat; just an all around nice baked good to have around. And, as as in the case for most quick breads, this is easy to throw together and get in the oven.

Streusel Topped Chocolate Chip Banana Bread

  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup solid shortening
  • 1 3/4 cups sugar
  • 2 cups of mashed bananas (this is about 5 to 6 medium bananas)
  • 1 tablespoon vanilla extract
  • 1 teaspoon banana flavoring
  • 1 teaspoon butter flavoring (optional, but it adds a nice flavor)
  • 4 eggs
  • 1 cup coarsely chopped toasted walnuts or pecans (toast in a single layer in a 350 oven until they are a light golden brown)
  • 1 cup semi sweet or dark chocolate chips or chunks
  • Streusel-
  • 1/2 cup sugar
  • 5 tablespoons flour
  • 1 1/2 teaspoons cinnamon
  • 1/4 cup unsalted butter, cold
  • 1/4 cup chopped toasted walnuts or pecans (optional; with me, nuts in streusel depends on my mood)
  1. Preheat your oven to 350. Grease 6 mini disposable foil loaf pans and set aside. Alternately, you can do this in a 9 inch loaf pan, but you’ll have extra that you’ll need to make muffins with.
  2. In a small bowl, whisk together the flour, salt and baking soda.
  3. In a large bowl, on low speed, cream together the shortening and the sugar until well combined. Add in the mashed bananas, vanilla, banana and butter flavorings and eggs. Beat well.
  4. Dump in the flour mixture and using a large spoon or rubber spatula, combine JUST until mixed. It’s fine if there are a few lumps or white streaks. I have said before and will say again, you do NOT want to over beat quick breads and/or muffins. You end up with tough rubbery final products doing that. Resist that urge.
  5. Fold in the toasted walnuts. Again; don’t over mix.
  6. Fill each mini loaf pan about half full. Sprinkle with about 2 heaping tablespoons of the streusel and then about a tablespoon of the chocolate chips. Divide the rest of the batter evenly over each loaf, carefully smoothing the top to get it over the streusel. Top each loaf with another 2 tablespoons of streusel and some chocolate chips. If you have streusel left over, it freezes wonderfully.
  7. Bake at 350 for 35 to 45 minutes minutes or until a wooden skewer inserted in the middle comes out clean  If this starts to brown too much, just lay a piece of foil over the top as it bakes.
  8. Let it sit in the pan for ten minutes, then gently squeeze the bottom of the pan to loosen the loaf and turn it out carefully to a rack to finish cooling.

Yes, yes I am still alive. As Mark Twain is said to have remarked, “Rumors of my death have been highly exaggerated”. Mind you, even as ancient as I am, I wasn’t around back then, so I don’t know that he actually uttered those words. But if one goes by the claims of the internet, he, Abraham Lincoln, Samuel L Jackson and Morgan Freeman are the only people who ever said anything worth quoting, other than a few random quotes attributed to Thomas Jefferson or Patrick Henry.
But I digress. Imagine that. I am here to bring you food!! Plus a giveaway. You all know I have had the much envied position of being a Hamilton Beach Ambassador for a couple of years now. As one, I get the opportunity to review their products from time to time and then offer those same products to you, my faithful (and slightly offbeat and rather warped) readers.
Today, I am bringing you two of the most iconic small appliances from Hamilton Beach– their 6 Speed Hand Mixer and their pretty darn awesome Stand Mixer. Let me tell you my thoughts on both now- First, the 6 Speed Hand Mixer-

I love this bad boy. This is the type of mixer one reaches for when doing the typical cooking/baking that requires a mixer. it is sturdy, easy to use ( I love the hand grip. It fits comfortably in my hand) and this one comes with some cool attachments,Hamilton Beach Attachments including a milkshake mixer (think of it rather like an immersion blender). I also love the storage area underneath. it’s a nice, convenient and NEAT (I have a thing for anything that leads to less drawer clutter) way to keep the attachments nearby. This mixer works well for everyday thing and has a “burst” button that gives you some extra power when you need it. it’s pretty much the perfect everyday mixer.

. This one is a bit more powerful than the hand mixer and has the convenience of the bowl and hands off usage. It doesn’t have the horsepower, so to speak, to do heavy doughs easily, so no, this isn’t one to try to make 4 loaves of whole wheat bread in. But for regular baking and mixing, this is a workhorse. It worked fine for me when I made chocolate chip cookie dough in it and we all know that that dough can be rather dense. The only thing I DIDN’T like though I know I may be in the minority with this, were the stability suction cups on the bottom to hold it still when mixing. They are a great idea, but if one tries to move the mixer from one spot to another, the way it sticks to the counter makes it pull up forcefully and can make the contents of the bowl go everywhere. Don’t ask me how I know this, please. Ahem. This one comes with a standard flat beater hook, a dough hook and a whisk attachment.Stand Mixer AttachmentsYou want to win these. Trust me. You do. Both together are close to a $150.00 value and with the attachments, are sooooo helpful in the kitchen! I made my famous (hey, it is… in my household! 😛 ) Old fashioned Banana Bread using the hand mixer and it worked wonderfully. Oh, you want the recipe, you say? Well, ok, if I MUST *gives you an evil glare and gets on to the recipe* 😛 <3

Old Fashioned Banana Bread

  • 2 1/2 cups flour
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup solid shortening
  • 1 1/2 cups sugar
  • 2 cups of mashed bananas (this is about 5 to 6 medium bananas)
  • 1 tablespoon vanilla extract
  • 1 teaspoon banana flavoring
  • 1 teaspoon butter flavoring (optional, but it adds a nice flavor)
  • 4 eggs
  • 1 cup coarsely chopped toasted walnuts (toast in a single layer in a 350 oven until they are a light golden brown)
  1. Preheat your oven to 350. Grease a 10 inch loaf pan (if you don’t have a 10 inch pan, make this in a 9 inch, and pour about 2/3 of a cup of batter into a mini loaf pan, a couple of muffin cups or a ramekin and bake it in there or you’ll end up with overflow everywhere) and set aside.
  2. In a small bowl, whisk together the flour, salt and baking soda.
  3. In a large bowl, on low speed, cream together the shortening and the sugar until well combined. Add in the mashed bananas, vanilla, banana and butter flavorings and eggs. Beat well.
  4. Dump in the flour mixture and on the lowest speed, combine JUST until mixed. it’s fine if there are a few lumps or white streaks. I have said before and will say again, you do NOT want to over beat quick breads and/or muffins. You end up with tough rubbery final products doing that. Resist that urge.
  5. Fold in the toasted walnuts. Again; don’t over mix.
  6. Pour the batter into the prepared pan/pans.  Bake at 350 for 55 to 75 minutes (yes, that’s a large gap. I’ve had it done by both both times. I have no idea why other than my oven is stupid 😛 ) or until a wooden skewer inserted in the middle comes out clean. If this starts to brown too much, just lay a piece of foil over the top as it bakes.
  7. Let it sit in the pan for ten minutes, then gently invert it over your hands and transfer it to a rack to finish cooling.

I’m not dead!!! Honest!!! *Checks pulse*  Oh, CRAP! Maybe I AM dead!! *Tries one more time to be sure* Whew… there it is. I was worried for a second. I was having a vision of having to be a zombie and eat brains; raw, no less. For the record, I am the one American left who has never, not even once, seen “The Walking Dead” or any of the popular zombie movies. What was that one??? 28 Days Later, I believe was the name? The idea of watching an hour or more of human beings eating each other just doesn’t do much of anything for me; other than make me a wee bit queasy. I’ll stick to reruns of The West Wing, M*A*S*H and Greys Anatomy, thankyouverymuch.

Man, now that I’ve written that paragraph, how do I manage to gracefully segue from zombies and eating people to banana bread? Hmmm.

I really am alive though. I apologize for the lengthy absence. I had the stomach flu, then I went through a few days of no inspiration, then the weather finally warmed up (boy, did it ever) and I had a ton of outside chores to do or oversee with my “Momma/Wife Whip” in hand. But I’m back.

I had a bunch of bananas that I needed to use up before they morphed into sentient life forms (I may have been too late. I think I heard one whimper when I mushed it up). My husband has been wanting banana bread for a while, so I decided to redo my old chocolate chip banana bread post. I’ve been making this for years and put it up here early on in the blog and the pictures, of course, bit donkey toes. So a redo was called for so I could get this out there again. This bread is so darn good. Moist, banana-ey (yes, that is now a word. Because I said so.), chocolatey, filled with chunks of melty, gooey chocolate chips.

You want this. Your spouse wants this. Your kids want this. Your neighbors want this. Your…ok, I’ll stop now. Sorry.

You know the drill…. 🙂

  • 2 cups flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon salt
  • 2 teaspoons baking soda
  • 1 cup butter (2 sticks), softened
  • 1 cup sugar
  • 6 to 8 mashed bananas (about 2 cups of mashed banana)
  • 1 1/2 teaspoons banana flavoring (found with the vanilla extract at the store)
  • 1 tablespoon vanilla extract
  • 4 large eggs
  • 1 1/2 cups chocolate chips
  1.  Preheat oven to 350. Grease 2 9 inch loaf pans. You can use 8 inch pans if you want a thicker loaf, but add on about 10 to 15 minutes more baking time.
  2. In a small bowl, whisk together the flour, cocoa powder, salt and baking soda.
  3. In a large bowl, cream the butter and sugar together until fluffy, about 3 minutes. Add the bananas and mix well. Mix in the eggs, vanilla extract and banana extract. Add the dry ingredients all at once to the wet ingredients and mix just until combined. Mix in the chocolate chips.
  4. Pour into the two prepared loaf pans and bake for 60 to 70 minutes or until a toothpick or skewer poked into the center of the loaf comes out almost clean. It’s ok if there are a few moist crumbs on it.. Let it cool for five minutes in the pan then turn it out onto a wire rack to finish cooling.

A little bit ago (which, in the south, can mean anywhere from ten minutes to two weeks ago) I asked my facebook fans which they would prefer- Creamy Banana Pudding or Apple Spice Cake With Creamy Vanilla Sauce. While I didn’t get many comments, the apple cake won by one vote. But I still wanted to do the banana pudding, too. This is one of those desserts that I used to make all the time when my older, now grown kids, were little. It’s easy, it’s tasty and when you have three to five kids running around, you need easy. You also need copious amounts of Xanax, intensive therapy and cheap booze, but that’s a post for another time. But for some reason, it fell by the wayside. I think that sometimes I get so caught up in making new treats, making something different, that I forget that my family loves the old standards too.

This isn’t my recipe. It comes from the Eagle Brand site, although when I started using it back in the day, there WAS no Eagle brand site… there was barely an internet lol. I got it from a magazine. The only thing I do differently is to add some vanilla extract to the mixture. It just adds a little something to it. You can also do this with instant banana, French vanilla, cheesecake or white chocolate puddings. It doesn’t change it enough to make it a sacrilege 😛 but it just makes it a little different.

The difference between this and the old fashioned version is technique. The old ones uses a cooked pudding base. It’s delicious but more time consuming. This one uses instant pudding that is whisked together with some other deliciously creamy ingredients and then layered. You can layer it in a large bowl or individual servings. For the sake of my waistline, I did individual servings this time. Otherwise, my mind says, “Honest Janet, this 8 inch thick layer of pudding that is practically overflowing the bowl is perfectly acceptable!”

You know the drill… get to cooking. Or not cooking in this particular case.

Creamy Banana Pudding

  • 1 14 ounce can sweetened condensed milk
  • 1 1/2 cups cold water
  • 1 1/2 teaspoons vanilla extract
  • 1 (4 serving size) package instant vanilla (or banana or cheesecake or snozzberry) pudding mix
  • 2 cups heavy cream, whipped to soft peaks
  • 1 box vanilla wafers
  • 3 to 5 bananas, sliced and dipped in a mix of lemon juice and water and drained on paper towels (prevents them from turning brown)
  1. In a large bowl, whisk together the water, vanilla extract and sweetened condensed milk. Add in the pudding mix and whisk until well blended.
  2. Chill for five minutes, then fold in the whipped cream.
  3. If using a large bowl, layer about one cup of the pudding in the bowl, then top with the desired amount of vanilla wafers, then about a third of the sliced bananas. Repeat this layering two more times.
  4. If doing individual servings, do the same layering, but in separate glasses. When doing individual ones, I also like to coarsely crush the cookies too because whole cookies just don’t fit well in smaller glasses.
  5. Chill for about an hour or so, then serve.

What is it with kids and fruit? There are times I simply can’t keep it in the house for more than 30 seconds because they are inhaling it practically before I can get it unpacked from the car and then other times it just sits there. Of course, those days when there is no fruit in the house, suddenly everyone wants it. Then the days when I have a ton of something like bananas around because they were griping that there weren’t any, that’s when no one eats them and I end up with 382 over ripe bananas on the counter. What does that lead to? A fruit fly party. They set up tents on my counters near the bananas and late at night I’m kept awake by teeny voices singing “Kum Ba Yah” and  the flicker of a little campfire. So I then set up vinegar swimming pools for them to lure them to their tangy deaths. But I still have 382 bananas to use up that now no one will touch because, “Ewww, they’re too ripe! I don’t like them like this!”

I’ve come to the conclusion that it’s all a ploy. They do it on purpose to get me to buy bananas that will get too ripe to eat just so that I have to cook with them. And there is only so much banana bread one can eat. Well, unless you’re my husband who would eat it 5 times a day for like 8 weeks before complaining. So one is left trying to figure out what to do with them. I don’t have a blender since mine was broken by an over zealous teen, so that leaves out banana shakes. That’s probably a good thing though because I do so love banana shakes and would over indulge if left to my own devices.

So I made cupcakes. I searched the web for a good recipe but just wasn’t liking anything I found. So this is an amalgamation of a handful of recipes… call it the Frankensteins Monster of banana cupcakes, minus the electrical wires.

These are fairly dense, which is what I was looking for. Call me strange but I like a heavier cake, reminiscent of a pound cake, at times. Not all cakes need to be all light and fluffy. This is fairly sweet with a heavy banana taste and are quite moist. They are great with or without the frosting. I actually only frosted about half and we ate the rest of them plain.

Brown Butter Banana Cupcakes With Banana Frosting

  • Cake-
  • 1 cup of mashed ripe bananas
  • 3/4 cup sugar
  • 1/3 cup dark brown sugar
  • 1/2 cup unsalted butter, browned and cooled*
  • 2 eggs
  • 1 egg yolk
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 1 teaspoon banana flavoring (sold by the vanilla)
  • 2 cups flour whisked together with
  • 1 teaspoon baking soda and
  • 1/2 teaspoon salt
  • Banana Frosting-
  • 1/4 cup unsalted butter, room temp
  • 1/2 cup cream cheese, room temp
  • 1 large ripe banana, mashed with 1 teaspoon of fresh lemon juice
  • 3 to 4 1/2 cups powdered sugar (will vary)
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons banana flavoring
  1. Preheat oven to 350 degrees. Line 16 muffin cups with paper or foil liners.
  2. In a large bowl, on medium speed, beat together the sugars and browned butter until light and fluffy, about 4 minutes. Don’t skimp on the beating.
  3. Turn the mixer to low and beat in the bananas, eggs, egg yolk, sour cream and extracts
  4. Stir in the flour/baking soda/salt mixture just until combined.
  5. Divide the batter evenly between the 16 prepared cups
  6. Bake at 350 for 19 to 21 minutes, until a toothpick inserted in the middle comes out clean.
  7. Let cool in the pan for about a minute then turn out onto a rack to cool completely.
  8. Frost with banana frosting.
  9. Banana Frosting-
  10. In medium bowl, combine the butter, cream cheese, mashed banana and the extracts. Beat well for about 3 minutes, until the mixture is smooth and creamy.
  11. On low speed (preferably over the sink to contain sugar dust), beat in 3 cups of the powdered sugar. Beat for 3 minutes until thick and creamy. If it isn’t of spreading consistency, add in another cup to cup and a half of sugar and beat well for about 2 minutes.
  12. Spread or pipe onto the cupcakes.

I’m one of those people whose mind never shuts down. I don’t say this in the tone of “I’m so damn smart, my mind is always working”. On the contrary. I said it never shuts down. Work on the other hand is a totally foreign concept to my brain. If my brain were a person, it would be sitting on the couch in a holey wife beater, holding a beer, chips and the TV remote, burping and watching something like “Nude Alligator Hunters” while it said to my body “make me a sammich, bit**!”. My mind needs therapy.

Point is, my mind annoys me. It will be 3am and the rest of the world is sleeping (ok, the rest in my time zone…who aren’t working 3rd shift…and aren’t insomniac…or watching “Nude Alligator Hunters”. Crap, ok, while SOME other people are sleeping) and my mind is creating story lines that I will forget by morning and never write. Or it will be wondering if the cats are warm enough…or why Bates on Downton Abbey let his estranged wife blackmail him. Or why things have the names they have.

Case in point- this cake. Really? Hummingbird Cake? There is not a Hummingbird in it… not even a stray feather. I had seen the original recipe for the layer cake and I know it’s a fairly old recipe, stemming from at least the Civil War era. Maybe they put Hummingbirds in it then? 😛 As I was saying; I’ve seen the recipe (maybe I should say “the receipt” since this is an old cake) for the layer cake and while it intrigued me, I was always hesitant to make it because it just sounded too sweet, too rich. WAIT!!! Don’t leave! Yes, that was really me that just said the words “too sweet” and “too rich”.  because…well… it did. A fairly rich cake layered with an ultra sweet and rich frosting. Just…too much. So when I saw this recipe for a bundt cake version with the frosting as just a glaze on top, I HAD to try it. The combo of banana and pineapple along with a cream cheese glaze was too much to resist. And oh boy, is it hard to resist. Moist and tender with the tropical flavors blending so well. Then the cream cheese glaze. Really… can you ever go wrong with cream cheese glaze? Plus it goes together quickly. No beating for 90 minutes and alternate adding of ingredients.

I still think I should have put a Hummingbird in it though. But the birds weren’t falling for my sign that said “Free Bird Seed Here… Enter Box Here—>” My son on the other hand… we still need to figure out how to get the box off of his head.

Hummingbird Bundt Cake

  • Cake-
  • 1 1/2 cups pecans, toasted
  • 3 cups flour
  • 2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon (I used 2)
  • 1/4 teaspoon salt
  • 3 eggs, lightly beaten
  • 1 1/4 cups mashed bananas (about 4 large)
  • 1 8 ounce can crushed pineapple, undrained
  • 3/4 cup vegetable or canola oil
  • 1 1/2 teaspoons vanilla extract
  • Glaze-
  • 4 ounces cream cheese, room temp
  • 2 cups sifted powdered sugar
  • 1 teaspoon vanilla extract
  • 1 to 2 teaspoons milk
  1. Preheat oven to 350 degrees. Grease and flour a 14 cup bundt pan. Sprinkle 1 cup of the pecans on the bottom of the pan, reserving the last 1/2 cup for sprinkling on the glaze.
  2. Stir together flour, sugar, baking soda, salt and cinnamon in a large bowl.
  3. Stir in the eggs, oil, bananas, pineapple and vanilla. Stir just until the dry ingredients are moistened.
  4. Bake at 350 degrees for an hour to an hour and ten minutes or until golden brown and a wooden skewer inserted in center comes out clean.
  5. Let cool in pan on wire rack for 15 minutes, then turn out onto rack to finish cooling for about 2 hours.
  6. For glaze- beat cream cheese until light, then add powdered sugar and beat on LOW speed (unless you like being covered in sugar dust) until well mixed. Add in the milk, a teaspoon at a time, only adding the second one of you need to make it thin enough to pour.
  7. Pour glaze over the top of the cake. Sprinkle with reserved pecans.

But What Will I Leave The Children?!

I’m not a wealthy woman. So far from it it’s giggle worthy. I have the same pipe dreams as everyone else about winning the lottery and living a life of leisure in my 4 bedroom house that has a library with floor to ceiling bookshelves. I’d eat seafood every night except for the nights I was eating steak of course. My kids would never need anything and I would be able to leave them large inheritances…such large ones that I would have around the clock security and metal detectors at the front door for when they came over to fawn over me and ask about my health. What?! I believe in being cautious!

But in real life… the same one where I clean my own toilets, clean up cat poop. have cooked approximately 10,000 meals since I entered adulthood (who am I kidding? I still haven’t entered adulthood. I don’t think you are allowed to say that until you prefer something other than Ho-Hos for dinner), did NOT pay someone else to give birth to six children (wouldn’t that be awesome!? Childbirth by proxy! Yeah baby!. Sorry. Moving on.) and have carpets desperately in need of steam cleaning, I don’t have large inheritances to leave my kids. So what will they be fighting over? Besides my collection of old rock and country albums and cassette tapes (yes, I have cassette tapes. Shush.) 300 gazillion books, more spices than any one household should have, stuffed animals older than dirt and the worlds strangest collection of knick knacks (including Stanley the Pig) that is? I was going to leave them my recipes. I had grand plans of making 6 different hand bound copies, lovingly hand printed, of all the recipes they grew up with and loved. My spaghetti sauce, lasagna, sticky buns, chicken curry, homemade rolls, banana bread, cranberry pumpkin bread, homemade apple butter and so many more. Mind you, in reality, they would have been left with rubbermaid containers and drawers (not to mention the top of my hard drive which is groaning under the weight of miscellaneous paper)  filled with about 3000 printed out recipes and some hand written ones but hey, my intentions were good. They will have to find the correct recipes (that is assuming I even HAVE a recipe for whatever they are looking for. Most of my cooking is just trial and error) and then figure out how I changed them because I never write down my changes. Between you and I, part of that is because I’m a stingy cuss who doesn’t want anyone to have my recipes 😛

But now that I have started this blog, my poor kids are screwed. They get nuthin’. Cause all my recipes are going to end up on here eventually. Such as today as I post my chocolate chocolate chip banana bread recipe. So what will I leave the children? Some Andy Gibb albums, figurines of a pig, old clothes and Bobby Goldsboro cassette tapes.

So kids… don’t fight over it all. And be nice to the piggie.

CHOCOLATE CHOCOLATE CHIP BANANA BREAD

  1. 2 cups flour
  2. 1/2 cup unsweetened cocoa powder
  3. 1 teaspoon salt
  4. 2 teaspoons baking soda
  5. 1 cup butter (2 sticks), softened
  6. 1 cup sugar
  7. 6 to 8 mashed bananas
  8. 1 1/2 teaspoons banana extract
  9. 1 1/2 teaspoons vanilla extract
  10. 4 large eggs
  11. 1 1/2 cups chocolate chips
  12. 1 cup walnuts (optional; I rarely use them)
  • Preheat oven to 350 degrees
  • Grease and flour two loaf pans or use the cooking spray that has both oil and flour in it. Either nine inch or eight inch will work. I use nine inch and that is what my cooking time is based on.
  • In a small bowl,mix together the flour, cocoa powder, salt and baking soda.
  • In a large bowl, cream the butter and sugar. Add the bananas and mix well. Mix in the eggs, vanilla extract and banana extract. Add the dry ingredients to the wet ingredients and mix just until combined. Mix in the chocolate chips and walnuts if you are using them.
  • Pour into the two pans and bake for 60 to 70 minutes or until a toothpick or skewer poked into the center of the loaf comes out almost clean. It’s ok if there are a few moist crumbs on it.. Let it cool for five minutes in the pan then turn it out onto a wire rack to finish cooling.
