I Like Taters Cause Taters Can Make You Mine…

I like taters, specially when eaten with lots of wine!! Ok, so my revamping of song lyrics leaves something to be desired. Like talent. But in my defense the song “I like Dreamin'” has been floating in my head all day long. I had to use it SOMEHOW!

Yes, I know taters can’t really make you mine either. But if I make them for my husband, they make HIM mine. Again. Or still. Or something.

Making these particular potatoes can quite possibly make anyone yours. Think crispy potatoes, gooey cheese, green onions, more gooey cheese. Wouldn’t YOU be someone’s sweetheart for that? I would. So maybe I would be someone’s sweetheart for a ten pack of Twinkies, a few Kindle E-Books and two liter of Coke but then, I’m cheap that way.

I found the original recipe for these potatoes HERE . I knew that, being me, I would change the recipe somewhat but honestly I didn’t do a whole lot. I added a teaspoon of jarred diced jalapenos, some extra cheese (you know me. I ALWAYS use extra cheese) and some green onion in lieu of the regular onion.

You need to try these. Trust me. Just cause I eat Twinkies and drink wine spritzers made with flat Sprite and cheap wine doesn’t mean I don’t know good potatoes when I inhale them. Admittedly, the above sentence isn’t the best way to endorse myself but oh well…

These really are good though. They use prepackaged hash browns which saves your knuckles from being grated (tell me that’s NOT just a problem I have?) so that is a definite time saver. There is really no way to take a beautiful picture of a hash brown casserole (not that beautiful pictures are my forte anyway but you get my drift) so excuse the poor photo and just go make these. There are five of us and it makes enough for 2 nights so be ready for that. The way I’m posting it is how I made it. Click on the link for their version ๐Ÿ™‚

Swiss & Cheddar Potato Bake

  • 30 ounces of frozen has brown potatoes, thawed in microwave (I actually used the ones in the refrigerator section; two bags)
  • 4 green onions, sliced
  • 1 tablespoon diced jalapenos (I used the jarred kind)
  • 3 tablespoons butter, melted
  • 1/2 cup flour
  • 1 cup shredded Swiss cheese
  • 3 cups shredded cheddar cheese
  • 5 eggs, slightly beaten
  • 1/2 cup half and half or cream
  1. Preheat oven to 350. Grease a 9×13 glass pan with cooking spray.
  2. In a large bowl, combine…well…everything except for 1/2 cup of the cheddar cheese. ๐Ÿ˜›
  3. ร‚ย Stir well to combine.
  4. Pour the mixture into the prepared pan.
  5. Bake at 350 degrees for 35 to 45 minutes, until nicely browned and bubbling around the edges.
  6. Sprinkle the last 1/2 cup cheese on top and bake for about another 5 minutes, just to melt the cheese.
  7. Let cool for about 5 minutes before serving

  1. Wow, this sounds AMAZING! cheese and potatoes together..yum. I would have to add bacon to mine but other then that everything is perfect. And there is nothing wrong with cheap wine, totally a staple of mine…it makes delicious sangria ๐Ÿ™‚

  2. These look delish and my mother had the nicest friend when we lived in New Mexico who drank red wine with Sprite. One day…I nabbed a sip. It was heaven!
