Ok, that was really corny but I couldn’t help myself.

If you’ve been a regular reader of my blog for a while, you may recall that up until last year, I had never eaten, much less cooked, a lava cake. It was one of those much hyped foods I avoided.

Then… I tried one. This one to be exact . And yeah, I admit it, I liked it. Just a little bit. Honest. I was still blase and ultra sophisticated, saying that I was so above all that… so not into the idea of a crispy edged cake with a center of soft gooey chocolate. Pshaw. You know how hip I am (I just lost “hip” status by using the word hip, didn’t I?) and too good for trendiness.

OK, OK, I LOVED IT!!!! *falls to the floor sobbing in abject “oh so not hip” shame*.

It was chocolate heaven on a plate. Crisp, yet gooey… chocolate yet in the case of that one, offset by fruit. So I decided a few days ago that I wanted more. I WAS going to make a white chocolate one but realized I had no white chocolate so that one will wait for now. I did however want something a LITTLE different than a plain one.

Well, I had a can (or six) of home made dulce de leche in the fridge ( I have to come clean and admit that I am one of those risk taking people who makes my dulce de leche by just boiling the unopened can for hours. What can I say? I like living life on the edge πŸ˜› ) Moving on… I decided I was going to make a lava cake with a center of dulce de leche. Yeah I know; as if the cake in it’s normal form isn’t enough with it 35,000 calories and 4 bazillion fat grams, I added dulce de leche. If it makes you feel better, I have a black bean and polenta recipe coming up soon? Nice and healthy. Well, except for the cheese and cream in the polenta. Sigh. I give up.

It turned out quite nicely. Mind you, after eating all of the one I photographed, I may never eat again, but that’s ok. I can live off my own fat and the fat in the cake for at least a decade, maybe more.

So give this a try. It’s actually really easy. And darn, does it taste good! The chocolate lava cake part of this is from The Neeleys on Food Network. The only addition here that is me is the dulce de leche. On a side note, this recipe makes Paula Deen recipes look like they are for health nuts. On a side side note, are health nuts anything like Corn Nuts? Are they edible? On a side side side note, when did corn get nuts?

Ok, I’m stopping now.

Chocolate Dulce De Leche Molten Lava Cake

  • 2 sticks (1 cup) unsalted butter
  • 4 teaspoons sugar for dusting ramekins (I didn’t bother with this & mine came out fine)
  • 1/2 teaspoon ground cinnamon
  • 1/8 teaspoon cayenne (optional. I used it but didn’t really taste it or feel any heat)
  • 12 ounces semi sweet chocolate
  • 1 cup flour
  • 2 1/2 cups powdered sugar
  • 6 large eggs
  • 6 large egg yolks (save those whites for other things!)
  • 1 1/2 teaspoons vanilla extract
  • 1/2 teaspoon almond extract (one of the rare times I wish I hadn’t used almond extract. It detracted from the other flavors even in that small amount)
  • 1 can (or one cup home made) dulce de leche)
  1. Preheat oven to 400 degrees. Grease 8 six ounce ramekins and sprinkle each with some of the sugar. Again, I didn’t bother with the sugar and mine were fine.
  2. In a medium microwave safe bowl, melt together the butter, chocolate, cayenne and cinnamon. Set aside.
  3. In a large bowl, whisk together the flour, powdered sugar, eggs, egg yolks and extracts. Beat until creamy.
  4. Add in the chocolate mixture and beat with the whisk until mixture is smooth.
  5. Pour into the prepared ramekins until each ramekin is half full. Top with a heaping spoonful of the dulce de leche. Finish filling each ramekin
  6. Bake at 400 degrees until the top is stiff and cracked, about 14 minutes.
  7. Remove from the oven and let cool in the ramekins for about five minutes, then turn out onto a plate. Serve with vanilla ice cream or whipped cream and please, trust me when I say 1) don’t eat a whole one on your own lol and 2) serve with some sort of unsweetened hot drink. These are very very sweet and very very rich.

  1. Oh, dear, Janet, I just had chest pains. Of course I did make my own version of lava cake for Valentine’s Day but mine had no dulce de leche and was, therefore, healthy and figure friendly…hahahahaha. Can you imagine how good this would be if someone were to somehow add peanut butter to it? Not that I’m suggesting you do that without checking with a cardiologist πŸ™‚

    • Believe it or not Anita and Rusty, I was thinking of that and will prolly do that in a future post. The only problem with that is that I won’t be able to describe the lusciousness of it to you since I don’t like peanut butter very much lol

  2. The 35000 calories and 4 bazillion grams of fat are the least of my worries… my blood sugar is 500 just looking at the picture πŸ™

  3. You know this is wrong don’t you. Wrong in a good way if eating 35000 calories and 4 bazillion fat grams will make you week in the knees and drool. And are you sharing any of your stash of dulce de leche? Inquiring minds want to know.

    • I’ll gladly share my stash of cans with you Sandra… of course, they may be EMPTY cans by the time you get them, but I WILL be sharing my stash hehehe

  5. Could this seriously sound any more delicious! Molten lava cake alone is over the top decadent, but then adding dulce de leche is just crazy delicious! I do not think I could resist this no matter how hard I tried and I think I would have to eat another person’s serving as well ;)! Wonderful dessert!

    The lava cake looks fab. I can’t find my favorite Mexican dulce de leche quemado any longer but I might try boiling cans again. Haven’t done that since I was a kid. It was a terrific treat. I prefer to pressure cook them as I live at high altitude.
